This homemade chicken seasoning recipe is easy to make and tastes so good! This recipe makes a little over two tablespoons of seasoning blend, which you can use on a whole chicken or for up to 6 chicken breasts or thighs.

It's perfect if you want to make a dry rub for chicken. It's versatile and pairs well with many other flavors - you can use it on grilled or baked chicken. I genuinely think these are the best spices for baked chicken.

This all-purpose chicken seasoning mix can also be used on roasted vegetables, in chicken soup, or on pork chops. It's a great savory blend and perfect if you like to make homemade seasonings!

This chicken seasoning mix is great because you can control what's in your chicken spice mix as opposed to buying a blend at the store that's probably very high in sodium. This mix saves well, so you can use it for several dishes.

This perfect blend of spices combines saltiness and umami for a variety of chicken dishes. It will work with whatever cut of chicken you'd like to use - boneless skinless chicken breasts, chicken thighs, a whole chicken, or wings.

You can certainly use this mix on other types of meat. It's great on pork and also works as a steak seasoning.

Ingredients You'll Need

To make this simple chicken seasoning recipe, you'll need several spices and dried herbs.

  • 2 teaspoons kosher salt
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon ground black pepper

If you'd like to like your blend to be a bit spicier, you can also add ¼ to ½ teaspoon cayenne pepper.

If you'd like a sweeter blend, you can add 1 or 2 teaspoons of brown sugar.

You can make a big batch of this recipe by doubling or tripling the ingredients. One batch makes about 2 tablespoons of seasoning blend.

How to Make Easy Spiced Chicken

The easiest way to use this chicken seasoning mix is to make simple spiced chicken thighs. Here's how to make a juicy chicken dinner.

  1. Preheat oven to 400 degrees F.
  2. Line a rimmed baking sheet with aluminum foil or parchment paper.
  3. Pat dry 6 bone-in, skin on chicken thight (about 2 pounds chicken thighs). In a bowl, toss the chicken thighs with 2 tablespoons of olive oil, then sprinkled on 4 teaspoons of chicken seasoning blend across the thighs. Make sure all thighs are coated on the top and bottom with seasoning.
  4. Lay thighs across the baking sheet, skin side up.
  5. Bake for 35 to 45 minutes, until an instant-read thermometer registers an internal temperature of 165 degrees F.

Ingredients

  • 2 teaspoons kosher salt
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon ground black pepper

Instructions

  1. Combine the salt, ground mustard, garlic powder, onion powder, paprika, dried thyme, dried oregano, and ground black pepper in a small bowl. Stir till fully combined. 
  2. Use immediately or save in an airtight container for up to 3 months in a cool, dry place. 

Notes

*For a spicier blend - add ½ teaspoon cayenne pepper or red pepper flakes. 

*For a sweeter blend - add 1 to 2 teaspoons of brown sugar.
