Ingredients You'll Need

Here's what you'll need to make this recipe.

  • 25 to 30 tortilla strip chips
  • ¼ cup salsa
  • 1 pound shrimp, peeled and deveined
  • 1 avocado
  • ½ red onion, finely diced
  • 1 tablespoon freshly squeezed lime juice
  • 2 teaspoons kosher salt, divided
  • ½ teaspoon ground black pepper
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

How to Make this Recipe

Pulling this recipe together is super simple! Here's how to do it.

Make the guacamole - Combine the avocado, red onion, lime juice, 1 teaspoon salt, and pepper in a small bowl and mash till fully combined. Set aside and allow the flavors to come together while you make the shrimp.

Prepare the shrimp - Thread 5 to 6 pieces of shrimp onto each skewer (use metal or wood). Combine the remaining salt, paprika, onion powder, and garlic powder. Sprinkle on both sides of the shrimp. Grill the shrimp on a medium-high heat grill for 2 to 3 minutes per side or until the shrimp is no longer translucent. Remove from the grill and allow to cool slightly before removing from the skewers with a fork.

Assemble the bites - Place as many tortilla strips as you have pieces of shrimp on a plate. Spread a dollop of guacamole on each tortilla strip, then place a piece of shrimp on each strip, and finally top with a teaspoon of Green Mountain Gringo®​ salsa. Serve immediately!

Tips for this Recipe

Cooking Tips - Cooked shrimp will be an opaque white with some pink or red. If the shrimp is still translucent, it's not done.

Storing Tips - This recipe is best served fresh. If you'd like to make it ahead, store the guacamole and cooked shrimp separately and assemble before serving. Cooked shrimp will save in the refrigerator for up to 3 days.

Alternate Cooking Methods - You can cook these on a grill pan on the stovetop as well. Heat the grill pan to medium-high heat and cook the shrimp for 3 minutes on each side.
