This recipe is very similar to Sole Meunière but with olive oil instead of butter. This baked white fish recipe couldn't be a simpler (but still flavorful) meal.
Ingredients
Here's what you'll need to make this healthy sole recipe.

- Fresh sole fillets
- Extra Virgin Olive Oil
- Garlic Cloves
- Chopped Fresh Parsley
- Freshly Squeezed Lemon Juice
- Sea Salt
- Ground Black Pepper

Instructions
Preheat oven broiler on high.
Pat the fish fillets dry with a paper towel.
In a small bowl, combine the olive oil, grated garlic, chopped parsley, and lemon juice. Stir till combined.

Place the fish on a parchment lined baking sheet. Sprinkle with salt and pepper.

Brush on the olive oil lemon juice mixture.

Broil the fish on high for 3 to 4 minutes or until the fish reaches an internal temperature of 145 degrees F on an instant read thermometer.
Serve immediately with optional lemon wedges or lemon zest.

Tips for Making Sole
Cooking Tips - Because you are broiling the sole on high, it will cook very quickly! Keep an eye on it and after the 2 ½ minute mark keep the oven light on to make sure it doesn't burn.
Storage
- Refrigerate - Save leftover sole for up to 3 days in an airtight container in the refrigerator.
- Reheat - cover fish with a damp paper towel and place on a microwave-safe plate. Reheat in 30-second increments till the fish has reached the desired temperature.
