This easy pumpkin spice oatmeal is ready in minutes! It's a delicious way to start the day and full of nutritious ingredients.

Oatmeal doesn't have to be boring! This recipe has great flavor from the pumpkin pie spice blend - it's perfect for fall or any other season when you want a delicious, warm breakfast.
You can use any kind of milk to make to make this oatmeal (I've used skim, soy milk, and almond milk), but my favorite is oat milk. Oat milk is creamy and has a neutral flavor that works well in recipes like this.

Ingredients for Pumpkin Spice Oatmeal
- Oats - I recommend using Old Fashioned Rolled oats for this recipe.
- Milk - I typically use skim milk for this recipe, but you can use a plant based milk or whole milk as well. I don't recommend subbing for water because milk adds so much creaminess to the oatmeal.
- Banana - the banana breaks down in the oatmeal and adds wonderful sweetness.
- Pumpkin Spice Blend - also labeled pumpkin pie spice in grocery stores. You can make your own homemade pumpkin spice seasoning too!
- Optional toppings - I like using diced apples, pepitas, chia seeds, honey to top my oatmeal.

Pumpkin Spice Oatmeal
Ingredients
- ½ cup old fashioned rolled oats
- 1 cup skim milk
- 1 banana cut into chunks
- ½ tablespoon chia seeds
- ¼ teaspoon pumpkin pie spice
- Optional toppings - diced apples, pepitas, chia seeds, honey
Instructions
- Combine the oats, milk, banana, and pumpkin pie spice in a small pot over high heat. Stir to combine and heat till bubbling (about 2 minutes).
- Reduce heat to low or medium-low and let mixture continue to gentle bubble for 6 minutes. Stir occasionally to make sure the oatmeal does not stick to the pot.
- Remove from heat and serve in a bowl with optional toppings.
Notes
- Storage - leftovers will keep for up to 4 days in the refrigerator.
- Reheat - warm on on the stove and add a couple of tablespoons of milk to help it loosen up.
- Increasing Servings - this recipe is easily doubled, tripled, or quadrupled - just adjust the ingredients and use a slightly bigger pot. When making larger batches adjust the simmering time to at least 8 minutes.
- Cooking Tip - Make sure to stir the oatmeal often when it's cooking, or it will stick to the bottom of the pot and be a total pain to clean! Start soaking the pot in water immediately after you've made the oatmeal so it's easier to clean later.
