These ricotta toast recipes are the best! They are a fabulous brunch or an easy lunch recipe. The savory toast is a delicious combination of ricotta, grilled tomatoes, and avocado. The sweeter toast has ricotta, fresh blueberries, and honey.

Savory + Sweet Toast Ingredients

If you’re making both toast recipes, you’ll need:

  • 4 pieces whole wheat bread
  • 1 cup part-skim ricotta
  • 1 cup blueberries
  • 2 teaspoons honey
  • 1 avocado, sliced
  • 16 cherry tomatoes
  • 2 teaspoons olive oil
  • salt & pepper

How to Make This Toast Recipe

For the savory toast:

  • Toast the bread.
  • Heat a grill pan over medium-high heat. When hot, place the tomatoes in the pan and let cook till they burst (6 to 8 minutes).
  • Spread 1/4 cup ricotta cheese on each piece of toast. Followed by the avocado slices on the toasts.
  • When tomatoes are cooked, add them as well.
  • Drizzle 1 teaspoon of olive oil on each toast, followed by a pinch of salt and pepper.

For the sweet toast:

  • Toast the bread.
  • Spread 1/4 cup ricotta on each piece of toast. Followed by 1/2 cup of blueberries per piece.
  • Drizzle 1 teaspoon of honey on each piece of toast.
