Hash Brown Avocado Toast Ingredients
Hash Browns - You'll need 2 hash brown patties. These will serve as the "toast". I used Trader Joe's Hashbrowns, but feel free to use whatever kind you'd like. The Dr. Praeger’s Four Potato Hash Browns are also nice!
Avocado - You'll need 1 ripe avocado. You can cut this to make avocado slices or make avocado mash with it. You'll use ½ the avocado on each hash brown.
Eggs - You'll need 2 eggs for this recipe. You'll poach these eggs, but if you prefer you can make a fried egg instead.
Seasoning - You'll use ½ tablespoon of Everything Bagel Seasoning to top the toasts. You can use another kind of seasoning blend if you'd prefer, but make sure to choose something with a little salt in it. Bonus if you use a blend with sesame seeds (furikake would work well!)
Optional Toppings - You can also top the poached eggs with some hot sauce (like a squeeze of sriracha sauce), some chopped fresh chives, or some red pepper flakes.
How to Make this Recipe
Make the Hash Browns - Bake hash brown patties in the oven according to package directions.
Poach the Egg - Meanwhile, heat a medium saucepan with at least 3 inches over water over high heat till gently boiling.
Reduce to medium heat, but keep the water simmering. Carefully crack the eggs into the gently boiling water and let simmer for 3 ½ to 4 minutes. Carefully scoop out the eggs with a slotted spoon.
Assemble - Place half a sliced or mashed avocado on each of the baked hash browns. Top with a poached egg and a sprinkle of Everything Bagel Seasoning.
Serve immediately.
