Have you tried a mango lassi before? You're going to love it! It's ready in just a few minutes, only takes four ingredients, and best of all, this recipe is vegan.
Typically, a mango lassi contains both regular milk and yogurt, but we're making this lassi with coconut yogurt!
A lassi is a drink made from yogurt, water, spices, and fruit - it's originally from Punjab, India, and is popular all over the Indian subcontinent.
Mango lassis are especially wonderful because they're frothy, sweet, and refreshing. They're great served alongside food or enjoyed as a dessert. They're especially cooling when served with a spicier dish like a curry.
Ingredients
You only need four ingredients (and possibly water) to make this lassi!
- 1 ½ cups coconut yogurt*
- 1 cup diced ripe mango (about two medium mangoes or one large mango)**
- ½ tablespoon brown sugar
- ¼ teaspoon cardamom powder
- optional - 2 tablespoons water if the mixture is too thick
*You can use regular yogurt if you don't mind the recipe not being vegan.
**You can use frozen mango if fresh mango is not available, just add a few extra tablespoons of water to make sure you have a looser consistency.
How to Make This Delicious Drink
- Combine the yogurt, mango, sugar, and cardamom in a blender.
- Blend for one minute or until fully combined.
- Add water if the mixture is too thick and blend again.

Tips for Making This Recipe
- Use very ripe mangoes for an extra sweet lassi. If you don't have fresh mango, you can use frozen mango, but you'll need to add a little extra water to loosen the blend.
- You can substitute the coconut yogurt for regular yogurt, but again, you'll need to add a few extra tablespoons of water to get the right consistency.
