You can scale these up and down as necessary. Two boxes are enough for short road trips.
These snacks need to be stored in a cooler. They don't have to be freezing cold, but they're better if they're a little chilled.

Veggies & Fruit - snap peas, cherries, blueberries, dried apricots, baby carrots, mandarine oranges, apples
Protein - almonds, string cheese, energy bars, nut butter, hard-boiled eggs, roasted chickpeas, and ramen snack mix.
Sweet Treats - graham crackers, chocolate covered raisins, whole grain cookies, dark chocolate

Ingredients
Cheese & Cracker Box
- 4 ounces cheese (I used sharp cheddar and mozzarella), cubed
- ¼ cup almonds
- ½ apple, sliced
- 6 to 8 woven wheat crackers
Protein Box
- hardboiled egg, halved
- pinch of salt and pepper
- 2 ounces mozzarella sticks
- ¼ cup grapes
- ½ apple, sliced
- 2 tablespoons peanut butter
- 5 to 6 woven wheat crackers
Instructions
- Cheese & Cracker Box - Combine in a plastic or glass container. Chill in a cooler till ready to eat.
- Protein Box - Sprinkle the egg with the salt and pepper. Put the peanut butter in a small container. Arrange all the items in a plastic or glass container. Chill in a cooler till ready to eat.
