Grilled Corn Salad with Avocado

This grilled corn salad is a perfect summer BBQ side dish. It's juicy, bursting with summer flavors, and wonderfully colorful. It's full of grilled corn, tomatoes, avocado, fresh herbs, and feta.

The ten years of my life I spent in Indiana still have a profound affect on my view of summer - I think it should be full of bright blue skies, so much green (trees, bushes, grass, perhaps some algae in the lake...) that you could cry, and freshly picked sweet corn. There were older kids that lived down the street from us that sold sweet corn from the back of a pickup truck in their front yard. I thought that picking corn was a little too challenging, but nevertheless they were the inspiration for my young entrepreneurship in my strawberry picking business. My mom would drop me off early in the morning at the strawberry patch and I'd pick berries for 3 hours and then spend the afternoon delivering them around the university campus my dad worked at, fulfilling all the orders I'd taken the day before. When a twelve-year-old walks into your office and asks you to buy a quart of freshly picked strawberries, you do not say no. 

Moral of the story - buy produce from weird little kids who are trying to make summer spending money + sweet corn is the best.

Enjoy this delicious, grilled corn salad with avocado!

Grilled Corn Salad

Makes 4 side salad servings | Prep Time: 20 minutes | Total Time: 25 minutes


4 ears corn, grilled on BBQ or grill pan

3 cups cherry tomatoes, halved

1 avocado, diced

1 cup fresh herbs (basil, cilantro, or a mix of both), chopped

juice of one lime

3 tablespoons olive oil 

2 teaspoons salt

1 cup feta


Cut the corn kernels off the corn husk and add to a large mixing bowl. 

Add the tomatoes, avocado, herbs (reserving a small amount for topping), lime juice, olive oil, and salt and stir to combine. 

Plate on a large dish or serving bowl and top with the feta and leftover herbs.
