Ingredients

Here's what you'll need to make the viral TikTok green goddess salad:

  • 1 small head of green cabbage, diced
  • 1 bunch of green onions, diced
  • 3 to 4 Persian cucumbers (or 1 to 2 English cucumbers), finely diced
  • ¼ cup diced chives
  • 1 cup soft herbs (basil, parsley, or dill)
  • 1 cup spinach 
  • 1 shallot, peeled
  • 2 garlic cloves, peeled
  • ⅓ cup nutritional yeast
  • ¼ cup olive oil
  • ¼ cup walnuts (or pecans, cashews, or hazelnuts)
  • Juice of two lemons (or lime juice)
  • 2 tablespoons rice wine vinegar (or rice vinegar)
  • 1 teaspoon sea salt

What To Serve With This Salad

You can serve this salad on its own as a side dish, but you can use it as a dip or topping too! I like to serve it with:

  • Tortilla chips
  • Pita Chips
  • Fresh Toasted Pita Bread (I stuff it in the center to make a sandwich)
  • Small Tortillas (Add in a few scoops and top with salsa or queso fresco for tacos)

Preparation Tips - The key to getting every flavor in a bite is dicing your vegetables really small. It's going to take some time, but it's very worth it!

Specialty Ingredients - If you don't have nutritional yeast or don't want to use it, it's okay to leave it out or substitute it for parmesan cheese. It adds a unique flavor though, so if you want to get some, I use the It's Just brand.

If you can't find green cabbage, you can substitute it for iceberg lettuce.

Ingredients

  • 1 small head of green cabbage, diced
  • 1 bunch of green onions, diced
  • 3 to 4 baby cucumbers (or 1 English cucumber), finely diced
  • ¼ cup diced chives
  • 1 cup soft herbs (basil, parsley, or dill)
  • 1 cup spinach
  • 1 shallot, peeled
  • 2 garlic cloves, peeled
  • ⅓ cup nutritional yeast
  • ¼ cup olive oil
  • ¼ cup walnuts (or pecans, cashews, or hazelnuts)
  • Juice of 2 lemons
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sea salt

Instructions

  1. Combine the chopped cabbage, green onions, cucumbers, and chives in a large mixing bowl. Toss to combine. 
  2. Add the herbs, spinach, shallot, garlic, nutritional yeast, olive oil, nuts, lemon juice, rice wine vinegar, and sea salt in a blender or food processor. Blend for 2 minutes or until the herbs and spinach have broken down and the mixture is combined. 
  3. Add the dressing to the chopped cabbage bowl and toss to combine. 
  4. Serve with optional tortilla chips, pita chips, or pita bread; or serve on its own as a side salad.

You can just leave the nuts out! If you want something crispy similar to nuts you could add panko breadcrumbs, but it's totally find just to remove them and not substitute.
