How to Pick the Best Sweet Corn

This salad is best with freshly picked, summer sweet corn. You can tell the best corn by its sweet smell and firm kernels. The tassels shouldn’t be browned or black – if they’re unspoiled they will be a nice blond color. You don’t need to pull the husk back in the store or farmer’s market to tell these things – just press (firm kernels), look (blonde tassels), and smell (fresh + sweet) and you’ll end up with a good ear of corn.
