- 4 ears sweet corn, husked
- 1 tablespoon vegetable oil
- 3 cups cherry tomatoes, halved
- 1 avocado, diced
- 1 cup fresh herbs (basil or cilantro), chopped
- juice of one lime
- 3 tablespoons olive oil
- 2 teaspoons salt
- 1 cup feta

How to Make Grilled Corn Salad
- Heat BBQ grill (or grill pan) to high heat.
- Coat the corn in the vegetable oil - using your hands or a brush. Place the corn on the grill and let grill for 15 minutes, rotating sides every 5 minutes, until grill marks have formed.
- Cut the corn kernels off the corn husk and add to a large mixing bowl.
- Add the tomatoes, avocado, herbs (reserving a small amount for topping), lime juice, olive oil, and salt and stir to combine.
- Serve the salad on a large dish or serving bowl and top with the feta and leftover herbs.

How to Pick the Best Sweet Corn
This salad is best with freshly picked, summer sweet corn. You can tell the best corn by its sweet smell and firm kernels. The tassels shouldn't be browned or black - if they're unspoiled they will be a nice blond color.
You don't need to pull the husk back in the store or farmer's market to tell these things - just press (firm kernels), look (blonde tassels), and smell (fresh + sweet), and you'll end up with a good ear of corn.

this if very refreshing and good. I did use avocado oil instead of Evoo and used basil for the herb. I would definately make this again.
