What You Need to Make Grilled Pineapple

You don’t need much to make this recipe! If you can’t find a full pineapple, you can buy precut spears from the grocery store.

  • 1 ripe pineapple, cut into spears
  • 1 teaspoon of olive oil
  • 1 cup fresh mint
  • juice of two limes & rind of one lime
  • 3 tablespoons cane sugar

How to Make This Grilled Pineapple Recipe

  • Heat grill (or grill pan) to high heat. Place pineapple on the grill and cook for 3 to 5 minutes on each side, or until dark grill marks appear. After both sides have been grilled, remove and let rest for 3 minutes.
  • Meanwhile, blitz the mint, lime juice and rind, and sugar in a food processor or blender – add a little water if the mixture doesn’t come together. It should be a chunky sauce though, so don’t add too much water.
  • Top the pineapple with the mint sauce and serve.

Ingredients

  • 1 ripe pineapple, cut into spears
  • 1 teaspoon olive oil

Instructions
