This grilled potatoes in foil recipe is the ultimate tasty side dish! Tender baby potatoes in a savory butter sauce are irresistible and will be a hit with the whole family.

Ingredients

  • Baby Potatoes - we're using baby potatoes as they easily cook on the grill. You can use red or yellow potatoes.
  • Butter - both to cook and flavor the potatoes.
  • Seasonings - you'll use garlic powder, sea salt, paprika, black pepper, and dried oregano to season the potatoes.

Instructions

Step 1: Heat the grill to medium-high heat.

Step 2: Mix the butter, garlic powder, sea salt, paprika, pepper, and oregano in a bowl.

Step 3: Place the potatoes on a large piece of aluminum foil. Toss with the melted butter mixture. Place all the potatoes cut side down.

Step 4: Fold the sides of the aluminum foil towards the center and seal the package. Place the foil packet on the grill.

Step 5: Cook the potato packet for 15 minutes. Carefully open it up and flip all the potatoes. Reseal the packet and cook for another 10 minutes.

Step 6: Remove the potatoes from the oven and toss with chopped fresh parsley. Serve immediately.

Tips for Making this Recipe

  • Remember to flip the potatoes after 15 minutes. This will make both sides of the potatoes crispy!
  • You don't need to peel your potatoes before cooking; the skin crisps up nicely.
  • You can cook the potatoes with oil instead of butter if you'd prefer.

Storage

  • Refrigerate - store leftovers in the refrigerator for up to 4 days in an airtight container.
  • Reheat - heat in the microwave in 30-second increments or in the oven at 350 for 5 to 8 minutes.
