Easy to make - With only 6 ingredients and no special equipment needed, you can whip these up easily and have them ready whenever you need a healthy snack or quick breakfast. 

Healthy and filling - These cookies include peanut butter to provide protein and healthy fats. Along with the fiber in the oats, the ingredients make a balanced and filling snack. 

Versatile - You can make your own flavors by adding your favorite mix-ins. Either replace the chocolate chips or do half and half with other add-ins. You can use anything you would like. Chopped nuts, dried fruit (like raisins, blueberries, raspberries, etc.), and dried coconut would all be delicious.

Here are the simple ingredients you'll need to make this easy recipe!

Bananas, oats, chocolate chips, peanut butter, coconut sugar, and vanilla extract.
  • Bananas - You want to use overripe bananas with lots of brown spots. This will help enhance the natural sweetness. 
  • Nut butter - I prefer peanut butter in this recipe, but you can also use almond butter or sunflower seed butter. 
  • Coconut sugar - Coconut sugar is a natural sweetener that tastes similar to brown sugar. It adds a bit of depth to the flavor to the cookies. 
  • Vanilla extract - Just a little bit of vanilla helps enhance the cookies' flavor. 
  • Oats — If you need a gluten-free cookie, use old-fashioned rolled oats or gluten-free oats. Quick oats will also work but do not use steel-cut oats. 
  • Chocolate chips - Dark chocolate chips or semi-sweet chocolate chips are best.

Instructions

Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

Peel the bananas and add them to a large mixing bowl. Use a fork to mash the bananas.

Add the oats and stir till fully combined. Then stir in the chocolate chips.

Use a cookie scoop or large spoon to scoop golf ball-sized rounds onto a parchment-lined cookie sheet.

Bake for 15 minutes.

Remove the cookies from the oven and allow them to cool for a few minutes before serving.

Tips for Making this Recipe

Baking Tips - Line your cookie sheet with parchment paper or aluminum foil. This keeps the cookies from sticking to the pan and makes clean-up easier!

Baking Time - If you like a crispier cookie, you can flatten the cookie dough balls with your hands before baking and add 2 minutes to the baking time. I enjoy a softer cookie (which these are), so only bake mine for 15 minutes. They need a few minutes to cool and set up before eating.

Baking Sheet - Because this cookie recipe makes 15 to 16 cookies, you'll likely need to use two sheet pans/cookie sheets to bake all the cookies. I used a full-sized, rimmed baking sheet and a half-sized rimmed baking sheet.

  • Eat them as dessert, just as they are. 
  • Serve for breakfast with a bowl of fruit, or if you're planning for guests and want to make a morning spread, serve with a fun rainbow fruit board.
