Mango Lassi Overnight Oats Ingredients

  • 2 cups old fashioned rolled oats
  • 2 cups plain yogurt (regular or coconut yogurt)
  • 1 cup milk (regular or plant-based)
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cardamom
  • ½ cup mango (plus more for garnish)

How to Make this Breakfast Recipe

Here's how to make this easy overnight oats recipe.

  1. In a large mixing bowl, combine the oats, yogurt, milk, honey, vanilla, and cardamom. Stir until well combined. 
  2. In a food processor or blender or with an immersion blender, blend the mango until you have a smooth puree. 
  3. Stir the mango puree into the oat mixture and mix until well combined. 
  4. Divide the mixture into 4 jars, place the lids on, and refrigerate overnight or for at least 6 hours. 
  5. Remove from the refrigerator and garnish with chopped mango before serving.

Tips for this Recipe

  • You can use fresh, frozen, or canned mangos for this recipe. I would highly recommend having an extra ½ cup to 1 cup of mango for topping.
  • You can keep these jars in the refrigerator for up to one week.
  • For a little extra fiber, sprinkle some chia seeds across the top.

Ingredients
