This delicious citrus berry salad with spinach is easy, refreshing, and bright.

This salad packs in several servings of fresh fruit and greens. It's quick to make and full of great flavors. I'll show you how to whip up a simple vinaigrette to top it off.

Sometimes, you just need a little food pick-me-up. When you are feeling low energy, it's hard to want to cook and make a big recipe. This fresh salad is super simple to make and will give you a great energy boost!

I made this citrus, berry, and spinach salad with almonds and a light vinaigrette because I needed to feel energetic after a long day at work. When you look up “energy-boosting foods” you'll see the list includes - citrus, berries, and spinach.

This fabulous, fresh salad not only tastes great, it really does boost your energy and mood. It’s hard not to feel great after you enjoy a bunch of berries and citrus.

Ingredients

Spinach, a halved lemon, blueberries, salt, pepper, chopped almond, clementine segments, honey, olive oil, grated garlic, and sliced strawberries.
  • Baby Spinach
  • Fresh Strawberries
  • Fresh Blueberries
  • Clementines
  • Almonds
  • Dressing - Extra Virgin Olive Oil, Freshly Squeezed Lemon Juice, Honey, Garlic, Sea Salt, and Pepper

Instructions

Mix the spinach, clementines, blueberries, strawberries, and half the almonds in a large bowl.

Whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper.

Drizzle the dressing over the salad and top with the remaining chopped almonds.

Serve immediately.

Tips for Making This Recipe

  • Make sure to really whisk the vinaigrette ingredients - it’s best when the olive oil and lemon juice are really combined. The honey needs to dissolve fully - this will emulsify the dressing.
  • You can substitute the berries if you have something else on hand (raspberries, blackberries, etc). Pomegranate seeds can make for a great addition.
  • If you can’t find clementines, substitute for mandarine oranges or chopped-up navel oranges.
  • If you can’t find triple-washed spinach at your grocery store, rinse the baby spinach well before adding it to this recipe - nothing is worse than gritty spinach.
  • Toast the almonds if you’d like them to be a bit crunchier, or use slivered toasted almonds.

Storage

The salad can be kept in the refrigerator for up to 3 days.

If you are making it ahead of time, I suggest storing the dressing separately and adding it to the salad right before serving.

  • 4 clementines, peeled and sectioned
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • ¼ cup chopped almonds
  • 3 tablespoons of extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 clove of garlic, minced
  • ¼ teaspoon sea salt
  • ¼ ground black pepper
