  • Mini Cucumbers (also called Persian cucumbers, can be substituted to English cucumbers if necessary)
  • Sweet Mini Peppers
  • Fresh Avocado
  • Cooked Shredded Chicken
  • Crumbled Feta Cheese
  • Ginger Dressing

Slice the cucumbers into rounds.

Chop the avocado into bite-size pieces and combine the veggies in a large bowl.

  • 3 mini cucumbers, sliced into coins
  • 5 to 8 mini sweet peppers, sliced
  • 1 medium avocado, diced
  • 1 cup cooked chicken, shredded or chopped
  • ¼ cup ginger dressing
  • ½ cup crumbly feta cheese


  1. Combine the sliced cucumbers, peppers, and avocado in a large mixing bowl and gently toss to combine.
  2. Add the chicken and ginger dressing and toss to combine.
  3. Add the feta, reserving a few tablespoons, and toss to combine. Top the salad with the remaining feta and serve immediately.
