You're probably like me in that you love raw cookie dough, but might be worried about eating raw eggs or raw flour. This recipe combines several ingredients that are safe to eat raw, so you still get the delicious cookie dough taste without any worries of food poisoning!

Ingredients

Here's what you'll need to make this vegan cookie dough recipe.

Maple syrup, peanut butter, almond flour, vanilla extract, salt, and chocolate chips.
  • Almond Flour
  • Natural Peanut Butter
  • Maple Syrup
  • Vanilla Extract
  • Salt
  • Dark Chocolate Chips (mini chocolate chips, if possible)

Instructions

Combine the almond flour, nut butter, maple syrup, vanilla extract, and salt in a bowl. Stir till fully combined.

If you want a super smooth texture you can blitz it in a food processor for 30 seconds.

Add the chocolate chips into the mixture and stir to combine.

Serve immediately or chill for 30 minutes before serving.

Substitutions & Variations

Want to swap some ingredients? Here are some changes you can make.

  • Sweetener - the maple syrup can be swapped for another natural sweetener like honey, coconut sugar, or agave, or brown sugar.
  • Flour - you can swap the almond flour for oat flour or coconut flour. I would not recommend using all purpose flour (the FDA recommends never eating raw wheat flour).
  • Nut Butter - you can swap the PB for other nut butters like almond butter, cashew butter, or sunflower seed butter
  • Chocolate Chips - feel free to swap the dark chocolate chips for milk chocolate chips or a chopped chocolate bar.
  • Other Mix-ins - you can also add chopped nuts (hazelnuts, pecans, or walnuts), shaved coconut, dried fruit (cranberries, chopped figs, or chopped apricots), or protein powder (vanilla or chocolate) to the cookie dough.

Storage

The cookie dough will keep for up to 4 days in the refrigerator in an airtight container.

You may want to let the dough come to room temperature outside of the refrigerator before eating. It tends to harden up if it's in the fridge for longer than 30 minutes.

If it's too thick, heat up a teaspoon of coconut oil or almond milk and stir that into the mix.
