This tender and flavorful freshwater fish recipe is a stunner! It's topped with a phenomenal blend of spices and baked to tender perfection. It's perfect for a dinner party or a weeknight meal.

I suggest buying your trout from a fishmonger who can clean the fish and check it for any pin bones.
Trout can often be found in grocery stores - especially rainbow trout and lake trout.
Ingredients
Here are the simple ingredients you'll need to make this healthy meal.
- Fresh Trout Fillet - for this recipe, you can use fresh lake trout (I used fresh Great Lakes trout) or Pacific trout (either rainbow trout fillets, steelhead trout, or cutthroat trout)
- Olive Oil - you can use olive oil or any other oil of your choice, like avocado oil.
- Seasonings - You'll make a spice blend with the following spices: smoked paprika, kosher salt, onion powder, garlic powder, dried thyme, ground black pepper, dried oregano, and cayenne pepper.

Instructions
Preheat oven to 350 degrees F.
Pat the trout dry with a paper towel and place trout skin side down on a parchment paper lined baking sheet.
Brush with the olive oil.
Combine the paprika, salt, onion powder, garlic powder, dried thyme, black pepper, oregano, and cayenne in a small bowl. Stir till combined.
Sprinkle the seasoning blend over the top of the trout and pat it in so it sticks.
Bake for 20 to 25 minutes or until the trout reaches an internal temperature of 145 degrees F and flakes apart.
Optional - top with chopped herbs like fresh dill or parsley.
Tips for Making this Recipe
Cooking Tips - I suggest using a rimmed sheet pan so there's no spillage from this fish into the oven.
Cooking Time - If you have smaller or thinner fillets, you may need less cooking time. You can check doneness with an instant-read thermometer. Trout should reach 145 degrees F at its thickest point.
Recommended Tools - Line your pan with parchment paper or aluminum foil to keep the fish from sticking to the pan.
Storage
The baked trout can be stored in the refrigerator in an airtight container for up to three days.
Substitutions & Variations
- Fresh Herbs - top the fish with your favorite fresh herbs like parsley or dill or even with microgreens.
- Heat Level - if you don't like spiciness, leave out the cayenne pepper.
