Ingredients

Here's what you'll need to make these homemade gingerbread cookies.

  • Coconut Oil
  • Molasses
  • Pure Maple Syrup
  • White Whole Wheat Flour
  • Ground Cinnamon
  • Ground Ginger
  • Allspice
  • Kosher Salt
  • Baking Soda
  • Ground Cloves

Instructions

Here's how to make a healthy gingerbread recipe.

Combine the coconut oil, molasses, and maple syrup in a large mixing bowl. Beat with a mixer for 2 minutes.

In a separate bowl combine the flour, cinnamon, ginger, nutmeg, salt, baking soda, and cloves. Stir till combined.

Add the dry ingredients into the wet ingredients gradually, while beating with a mixer for 3 minutes.

Cover the bowl with plastic wrap or a towel and refrigerate the cookie dough for 1 hour.

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. 

Remove the dough from the refrigerator and place on a clean work surface. Lightly dust with flour. Roll to ½-inch thickness (dust your rolling pin with flour if needed).

Cut gingerbread men with a gingerbread cookie cutter (or other shapes as desired). Place onto prepared baking sheets.

Bake cookies for 9 to 10 minutes for soft gingerbread cookies.

Allow to cool on the baking sheet for 5 minutes before removing them to fully cool on a wire rack.

Decorate with sprinkles or icing as desired.

Cookies will stay fresh at room temperature for one week or can be frozen for up to 6 months.

Substitutions & Variations

Want to make some ingredient swaps? Here are some possible substitutions.

  • Flour - you can use all purpose flour if you can't find white whole wheat flour.
  • Sweetener - the maple syrup can be substituted for the same amount of coconut sugar or brown sugar.

Storage

Gingerbread cookies will stay fresh at room temperature for one week when stored in an airtight container.

Or they can be frozen for up to 6 months.

Tips for Making this Recipe

Cooking Tips - For best results, I recommend lining your cookie sheet with parchment paper. This will keep the cookies from sticking to the baking sheet.

Ingredient Notes - I recommend using regular molasses and not blackstrap molasses, as blackstrap tends to be more bitter

  • ½ cup of coconut oil, melted
