Ingredients You'll Need
- Bread - You'll need half a baguette or a demi-baguette for this recipe. You'll want 9 to 10 slices.
- Avocado - You'll use 1 large avocado for this recipe. I used a Haas avocado.
- Kimchi - You'll need ½ cup of kimchi for this recipe. You want a small piece for each crostini.
- Toppings - You can use a mix of sliced cherry tomatoes (or a larger tomato if you have one on hand), sliced green onions, black or white sesame seeds, and some freshly squeezed lime juice. Feel free to hit it with a crack of freshly ground black pepper or sea salt, too!

Kimchi Avocado Toast
Ingredients
- 1 demi-baguette or half a baguette sliced (9 to 10 slices)
- 1 avocado
- 1 tablespoon lime juice
- ½ cup cabbage kimchi
- 10 cherry tomatoes thinly sliced
- 2 green onions sliced
- 1 teaspoon sesame seeds black or white or both
Instructions
- Toast the baguette slices in a toaster oven or in a regular oven till they are warm and golden brown.
- Combine the avocado and lime juice in a small bowl. Using a fork, mash the avocado until it's a spreadable consistency.
- Spread a layer of avocado mash across the slices of baguette. Top with a piece or two of kimchi.
- Add a few slices of cherry tomato or green onion to the top of each crostini. Then top with a sprinkle of sesame seeds.
- Serve immediately.
