This crunchy, healthy salad was inspired by a weekend of overconsumption. When you're in one of those places where you just desperately crave a bowl of healthy greens and real food. This is the best detox salad for when you want loads of flavor and lots of fiber!

It's got loads of greens, fruit, herbs, and nuts. It's calorie-dense food with high water content, so it will leave you feeling sated and refreshed.

This recipe calls for loads of fruit and veggies - if you don't care for some of them or don't have them on hand, swap them for something else!

  • Seedless Grapes
  • Fresh Apples (Honeycrisp, Pink Lady, or any other kind you like)
  • Greens (baby spinach, baby arugula, Spring mix, or baby romaine)
  • Celery Stalks
  • Small Carrots
  • Pomegranate Seeds
  • Toasted Walnuts
  • Toasted Pistachios
  • Dried Cranberries

How to Make this Salad

  1. Combine the grapes, apples, chopped greens, celery, carrots, pomegranate seeds, walnuts, pistachios, cranberries, and raisins in a large bowl. Toss to mix.
  2. Whisk the olive oil, lemon juice, salt & pepper together in a small bowl.
  3. Pour the lemon vinaigrette dressing over the salad and toss gently to combine. Top with optional microgreens or sprouts.

Ingredients

  • 2 cups of seedless grapes, halved
  • 3 apples, diced (Honeycrisp or Pink Lady)
  • 2 cups roughly chopped greens
  • 2 stalks of celery, diced
  • 2 small carrots, peeled and sliced into rounds
  • ½ cup pomegranate seeds
  • ½ cup walnuts, roughly chopped
  • ½ cup pistachios, roughly chopped
  • ¼ cup dried cranberries
  • ¼ cup dried raisins (or currants)
  • 2 tablespoons olive oil
  • 3 teaspoons fresh lemon juice
  • pinch of sea salt & pepper

Instructions

  1. Combine the grapes, apples, chopped greens, celery, carrots, pomegranate seeds, walnuts, pistachios, cranberries, and raisins in a large bowl. Toss to mix.
