The Simplest Salad - Tomatoes & Cantaloupe
This is a non-recipe recipe, in that it's a ridiculously simple 4 ingredients (not including the S&P). But, it's one of my favorite salads. It's a great light lunch or a simple side for dinner. Tomato and cantaloupe is a glorious combination, that I know you'll enjoy!
I vividly remember the dinner party where I first had this combination of flavors. It was mid-summer in Abu Dhabi and about a thousand degrees outside, so we just hung out in people's houses and had dinner parties. I was over for dinner at a friend's house, and I'm sure they made a lovely main course, but all I remember was this salad and talking about how good it was. It was actually embarrassing how much I talked about the salad.
I hope you enjoy this flavor combination as much as I do. I think it's really important to use a very ripe cantaloupe. Mildly ripe cantaloupe is just meh. The flavor and color are at their best when they're super ripe.
- 1 cantaloupe, scooped with a melon baller
- 15 cherry tomatoes, halved
- 1 tablespoon olive oil
- 5 leaves basil leaves, roughly chopped
- salt & pepper
