You can use your favorite veggies and cheese in this quiche (some substitution ideas can be found below) - it's endlessly versatile.
Ingredients
Here are the simple ingredients you'll need to make this easy breakfast quiche recipe.

- Prepared Pie Crust or Homemade Pie Crust - I like using a premade frozen pie crust to save time, but you can make a homemade one if you'd prefer!
- Olive Oil - you'll need just a little to cook the onions and garlic.
- Red Onion - finely diced red onion adds some zingy flavor - it can be substituted for yellow onion or shallots if you'd prefer.
- Garlic Cloves - a few fresh cloves of garlic add excellent allium flavor.
- Red Bell Pepper - fresh and tangy, bell peppers work perfectly in a quiche. Substitute for your favorite vegetables, including a pint of halved cherry tomatoes, 1 green bell pepper, or 1 cup of chopped asparagus.
- Ground Breakfast Sausage - adds delicious savory flavor to the quiche. You can swap for ground turkey if you'd prefer.
- Baby Spinach - adds some fresh and bright flavor!
- Fresh Eggs - you'll use several large eggs - they are essential to the recipe, so don't substitute!
- Milk - quiche often calls for call for heavy cream, but I've lightened up this recipe by using skim milk. The flavor and texture are still fantastic.
- Sharp Cheddar Cheese - Cheddar is a classic in a quiche, but you can substitute for Monterey jack cheese, gruyere cheese, goat cheese, or feta cheese.
- Seasonings - use a little sea salt and black pepper to bring out the best flavors.

What to Serve with Quiche
I like to serve quiche with a side salad - it helps to balance the heft of the quiche with something bright and crisp. I recommend my spring mix salad, easy green salad, or baby kale salad if you'd like a green salad. You can also serve it with a breakfast fruit salad if you'd prefer something sweeter!

Sausage Breakfast Quiche
Ingredients
- 1 pre-made pie crust or homemade dough
- 1 tablespoon olive oil
- ½ red onion diced
- 2 cloves garlic minced
- 1 red bell pepper diced
- ½ pound ground breakfast pork sausage
- 2 cups baby spinach
- 5 large eggs
- ½ cup skim or 2% milk
- ½ cup shredded sharp cheddar cheese
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat oven to 350 degrees F (176 C).
- Roll out the dough and place in a 9-inch pie plate, or if using a ready-made crust, defrost according to package directions.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the diced onion and let sauté for 3 minutes. Then add the minced garlic and diced bell pepper and cook for 3 minutes, stirring occasionally.

- Then add in the breakfast sausage, and break it up with a spoon or spatula. Let sauté for 3 to 5 minutes until it browns. Add the spinach and cook just till the spinach has wilted.

- Spread the sausage onion mixture across the base of the pie dough in an even layer.

- Crack the eggs into a mixing bowl. Whisk till the yolks break. Add in the milk, cheese, salt, and pepper. Whisk till combined.

- Pour the egg mixture on top of the sausage mixture.

- Bake for 45 to 50 minutes or until the center of the quiche has set and the crust is golden brown. Allow the quiche to cool for 5 to 10 minutes before slicing and serving.
