Grilled Halibut Recipe

If you love white fish recipes, you'll love this grilled halibut. And in the summer, it's a great way to use your outdoor grill instead of heating your house with an oven. 

This halibut is perfectly grilled with a lovely citrus butter flavor that's hard to resist. Grilled fish has a mouthwatering flavor, and it's easy to make!

If you're unfamiliar with halibut, it's a popular white fish with a mild and slightly sweet flavor. It's loved as it's not very fishy and is similar to tilapia and cod. However, it's firmer than cod. 

Halibut is a mild fish that tends to absorb the flavors of seasoning used. And the buttery-garlic mixture with just a bit of honey gives this fish a lovely flavor profile. This recipe doesn't involve much prep time, and you're going to love the flavor of halibut cooked on a grill.

Ingredients

You don't need much to make this simple recipe. Here's a list of ingredients you'll need: 

Grilled halibut ingredients.
  • Halibut fillets – Make sure you're buying fresh fish and select halibut fillets, not steaks. Halibut steaks have a low oil content, so they tend to dry out more on the grill. You should be able to find these at many grocery stores or the fish market. 
  • Kosher salt and ground black pepper - Salt and pepper are added to the fillets to add flavor. These simple seasonings are often underestimated but make a big impact. 
  • Butter - Butter provides such a nice flavor with herbs, garlic, and honey, but if you prefer olive oil, you can use that instead. 
  • Honey - A bit of honey in this recipe adds just enough sweetness to enhance the flavors of the halibut. 
  • Fresh garlic cloves  - These aromatics give this halibut its flavor. Don't skip either of these.
  • Optional toppings for serving - You can add additional chopped fresh herbs, like fresh parsley or fresh basil, and serve with lemon or lime wedges to squeeze a bit of fresh lemon or lime juice over the top.

Instructions

Remove the halibut from the refrigerator 15 minutes before cooking to bring it to room temperature. 

Preheat your gas grill to medium-high heat (375 degrees F) or heat a grill pan over medium-high heat. 

Pat halibut dry with paper towels.

Whisk the melted butter, honey, grated garlic, and citrus zest in a small bowl and brush fish with the herb butter mixture on both sides.

Sprinkle salt and pepper across both sides of the halibut fillets.

Brush the grates of your grill with a bit of neutral cooking oil (like avocado or canola) or non-stick spray so the fish doesn’t stick. 

Place fish fillets on the grill and close the grill cover. Allow to cook for 6 minutes.

Flip the fillets over and allow to cook for an additional 5 minutes or until the fish flakes apart with a fork or reaches an internal temperature of 145 degrees F on a meat thermometer. 

Transfer fish to a platter and serve immediately with some fresh lemon wedges to squeeze with a little lemon juice.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. 

Tips for Making this Recipe

Cooking Tips - To keep your halibut from sticking to the grill, clean your grill with a brush thoroughly and then use tongs to wipe it with a paper towel saturated in vegetable oil right before placing the fish on the grates.

Specialty Ingredients - Halibut can often be found fresh between March and November. You can enjoy it year-round, but you will likely find it frozen in the off-season.
