Ingredients

  • 3 medium zucchini
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ¼ cup chopped fresh parsley
  • 10 fresh basil leaves, finely chopped
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Cut the ends off the zucchini and slice it in half lengthwise. Cut out the center seeds or dry areas if necessary. Then, cut into ¼-inch half-moon slices.
  2. Heat a large skillet over medium-high heat. Add the olive oil and butter. 
  3. Add the zucchini once the oil is hot and the butter is bubbling. Stir the zucchini to coat them in the butter and oil. Sauté for 5 minutes. Stir again and flip the zucchini pieces over, and cook for 4 more minutes. 
  4. Add the garlic to the pan. Stir to combine and cook for an additional 2 minutes. 
  5. Remove the zucchini from the heat and add the chopped parsley, chopped basil, lemon juice, salt, and pepper. Stir and serve immediately.
