25 Healthy Watermelon Recipes

These healthy watermelon recipes are all fantastic recipes to make during the hot summer months when watermelon is at its peak. There are side salads, desserts, and even main courses with ripe, juicy watermelon!

Watermelon is so refreshing and a good source of vitamin C. These are some of my favorite ways to enjoy watermelon, and you'll love them too! 

I recommend a seedless watermelon for these recipes so you aren't battling the seeds. Picking a watermelon can be tricky. I created a guide to show you how to choose the best mini watermelon so you know it will be juicy and perfect. 

1. Mexican Watermelon Salad

With fresh squeezed lime juice and the salty taste of cotija cheese, this watermelon salad is so refreshing on a hot day. The cotija cheese helps to mellow out the tang and slight spice from the citrus and Tajin seasoning.

Healthy Watermelon Recipes

A Mexican watermelon salad with jalapenos.

Try one of our favorite healthy watermelon recipes - this Mexican-inspired watermelon salad with Tajin seasoning.

  • ½ small seedless watermelon
  • 1 tablespoon olive oil
  • 2 teaspoons freshly squeezed lime juice
  • 1 tablespoon Tajin seasoning
  • 2 ounces Cotija cheese, finely crumbled
  • 2 teaspoons finely chopped cilantro
  • ½ lime, sliced for serving
  • optional - ¼ of a jalapeno, finely sliced


  1. Place the watermelon cut side down on a cutting board. Run a knife from the top to the bottom, in strips, to cut the rind off.
  2. Cut the watermelon into 1-inch thick plates, then slice into triangles.
  3. Arrange the slices on a large plate or tray.
  4. Drizzle with olive oil and lime juice.
  5. Sprinkle with tajin seasoning and Cotija cheese. Add the cilantro and optional jalapenos.
  6. Serve with lime wedges.
