Ingredients
- Onions - I recommend using yellow onions as they're milder in flavor. Sweet onions (like Vidalias) would also be wonderful!
- Parmesan Cheese - use shredded (not grated) parmesan cheese. This will create a beautiful lacy lattice of cheese to hold the onions.
- Olive Oil - brush the onions with a little olive oil to help crisp them up.
- Seasonings - you'll use smoked paprika, garlic powder, salt, and pepper to season the onion chips.

Instructions

- Step 1: Preheat oven to 400 degrees F. Thinly sliced onions on a mandolin or with a very sharp knife.

- Step 2: Spread Parmesan into a layer covering a parchment-lined baking sheet.

- Step 3: Spread the onion slices over the Parmesan in a single layer.

- Step 4: Brush the olive oil on the tops of the onions. Sprinkle the salt, garlic powder, paprika, and black pepper over the onions.

- Step 5: Bake for 18 to 20 minutes until the cheese is crispy.

- Step 6: Allow to cool for a few minutes before slicing into chips.
Tips for Making this Recipe
- Cooking Tips - Check your onions after 18 minutes of cook time. They may be ready or may need up to 4 to 5 more minutes, depending on how thickly you slice your onions.
- Specialty Ingredients - Smoked paprika if often used in onion rings, so it will give you the most similar flavor, but it's not absolutely necessary and can be substituted for regular paprika if you'd prefer!
- Recommended Tools - I highly recommend using a mandoline to slice your onions. This guarantees a thin, uniform slice. Just be sure to wear a cut-proof glove to protect your fingers, as mandolines are super sharp!
Storage
While they are best served fresh (and don't reheat well), here are some ideas for saving leftovers. I do not recommend making this recipe ahead of time.
- Storage - leftover onion chips can be stored for up to 3 days in the refrigerator in an airtight container.
- Reheat - Reheating is tricky, as the parmesan tends to melt. I recommend reheating in the oven rather than in a pan on the stovetop or in the microwave. It still will not be as crispy in the oven, but it's the best option.
